I have been eating a ton of asparagus lately and hated wasted all the “woody” ends. So I googled and found that you could use them to make asparagus soup. So I took the basic recipe, tweaked it to use up some other stuff I wanted to use up and it came out DEEE-licious ;)
“Creamy” Asparagus Soup
Woody stems from a bunch of asparagus
4 cups FF low sodium chicken broth
2 medium apples (I used gala)
2 medium onions (I used red onions)
Core and slice the apples. Peel and slice the onions. Put all 4 ingredients in a pot and cook on medium until it comes to a boil. Then turn down to simmer and cook for 45 minutes. Then use an immersion blender (I don’t have one, so I just in batches put It in my regular blender) and blend all. I put some freshly ground pepper on the top of each bowl, but didn’t add any salt.
I had some left over bread I made into some croutons and put into it when I served it. It ended up tasting like the tastiest French Onion soup without the cheese.
